friday favorites

Thanks to the short work week it's already Friday!

I am very much looking forward to a relaxing weekend that includes getting some things together for work, some down time [no tv or computer!], yoga, cooking, and some DIY projects around the house.

Nothing is actually planned which is sounding absolutely wonderful. Ahhhhh.

So since it is Friday after all, let's take a look at some of my favorites this week.

Frozen soup! After time off from work and my regular routine, this week has been challenging on the cooking front so I've been resorting to soup I froze last month for quick weeknight dinners. Making big batches of soup and freezing portions in individual tupperware is one of my top healthy eating tips, it makes dinner so so easy. This is a kale, sweet potato, and white bean soup that is super healthy and super yummy. I can't remember the exact recipe but it was based off this one here.


Toast with butter [or Earth Balance] and jam. This always reminds me of my grandma for some reason and is just so dang comforting. I've been eating the combo all week with either soup or eggs. 


More bread with Earth Balance. I made a batch of Katie's cornbread and used raw turbinado sugar instead of stevia and have been eating it with soup. It freezes well too and is good as a snack with honey!


Fried eggs. A little earth balance or coconut oil in the bottom of your pan does wonders when making over easy eggs. I love 'em for dinner. Make sure to use a high heat oil like coconut or safflower when cooking though. Olive oil become inflammatory to the body when heated above 325 degrees so save it for salad dressings, hummus, pestos, and dipping bread in.


Three ingredient milkshakes! Last night, Andy and I were laying on the couch watching How to Lose a Guy in 10 Days [all time fav that never gets old], I was hungry, and a craving struck for a milkshake. So I whipped out the Vitamix and threw together a peanut butter banana "milkshake" in all of 3 minutes. Into the Vitamix went 2 frozen bananas, 1 cup vanilla almond milk, and roughly 1/4 cup of peanut flour [you could totally use peanut butter] plus a pinch of guar gum [also totally optional but thickens it up!] and some ice. They turned out so good and so peanutty! This will be happening again.


Plans for this afternoon include an easy run and coffee with a friend.

  3. There's something about butter that makes jam taste so much better on toast! Also I love cream cheese and jam on toast too.

  4. Everything looks delicious. Can you explain the olive oil thing a bit more? I didn't know anything about it being inflammatory.

    1. As an unrefined oil, extra virgin olive oil should not be exposed to heat higher than 325°F as this will create a very inflammatory oil for your body. When heated about 325 olive oil decomposes resulting in dangerous molecules replacing natural antioxidants. Therefore, the nutritional value of olive oil can be compromised, because when overheated the oil releases carcionogenic free radicals.
