my favorite pre-race meal

Happy Friday everyone!

And it's St. Patrick's Day weekend!

And race day weekend....

This weekend last year, I was up in DC running the National Rock n' Roll marathon. This year I'll be in town running the Charlottesville 10 miler, the oldest, largest [and gahhh hilliest] footrace in Cville. I ran this race last year two weeks after the marathon, but this year it was scheduled on the same weekend and I picked the 10 miler. My mind wasn't ready for a marathon...at all. [yes, I stole this picture off the internet, please forgive me.]


I'm excited and also nervous, but looking forward to getting on the starting line. Tons of people will be out there and friends will be there cheering. Keeping my fingers crossed for no rain!

This morning I went to see trainer J for mashing, foam rolling, and stretching/mobility exercises in prep for tomorrow and this afternoon I'm headed to ACAC to soak in the hot tub. Ahhhhh, yea.

I'm going to head over to the race expo this evening to hang out at The Gym's booth with J and talk nutrition and hand out some goodies, should be fun! And then Andrea and I will be hanging on the couch and I'll be tucking in early. But not before eating some dinner.

Back in college and high school my go to meal was pizza, I wasn't a huge fan of pasta but pizza was my jam. Momma coale always made whole wheat dough from scratch and then piled on the veggies and cheese. But since dairy and I had a falling out, my favorite pre-race meal is vegan stuffed shells. And yes, they are really good. I promise. I've made them for my brothers, momma, and Whitney and it's not until after their first bite I tell them their eating tofu.

What?

Ya'll, tofu ricotta makes vegan italian food possible.


You can also use the tofu ricotta filling for lasagna, stuffing portabella mushrooms, or putting it in wraps with veggies!

And I can 99% guarantee that tonight I'll polish off an almost empty PB jar I've been hoarding and a bowl of popcorn while watching Apple TV with Andy.

  1. I ran the 10 miler the last three years, this year because i am in DC I chose the half here. However, the Cville 10 miler will always be a race I love, i warn you though those hills are killer!

  2. Those stuffed shells look incredible. I think that might need to be on my menu next week. :)

    While I am not running a race in the morning, I will definitely join you on eating peanut butter and popcorn tonight. Except my choice will be Wild Squirrel Vanilla Espresso Almond butter plus Artisana coconut butter drizzled over frozen bananas and a side of popcorn. When this girl eats nut butters, she goes all out! ;) Good luck on your race!!!!

  3. You look like such a baller in that pic! Good luck tomorrow, I'm excited to hear how it goes, I'm sure you will rock out! I did my first half in Charlottesville, and YES, it is very hilly!!

    That ricotta looks AMAZING and my last tofu meal was pretty good :) So...I guess I'd be willing to try another :)

  8. I hope you had a fabulous race! I haven't run the Cville 10-miler but a handful of friends who went to UVA have and said it was fun :) And those stuffed shells - holy YUM!!!
