I ate the best food this weekend in Nashville.
Like, the best food I've had in a really really really long time.
I did a lousy job of taking pictures, mainly because it was such a whirlwind weekend with so much to take in.
But I did get a few, especially of dinner at the Wild Cow- a restaurant in East Nashville that I could eat at for the rest of my life.
If I moved to Nashville, I told Momma Coale I would surely go broke here.
Vegan cupcakes. Sour cream and onion kale chips. Local kombucha. Vegan nachos. Tempeh Thai Tacos. Vegan philly cheesesteak sandwiches. And SO much more.
The restaurant doesn't even have a freezer or microwave in it because everything is made fresh. They use local and organic produce whenever they can. And the 'bulk food' that fills the shelves in the kitchen are things like Bragg's Liquid Aminos, Garden of Eatin' tortilla chips, and coconut oil. Swoon.
I ate the best vegan nachos of my life Friday night. And then we went back to eat them again on Saturday. We also ate the tempeh reuben drool with pineapple cole slaw Friday and the peanut tempeh tacos with kale and some sort of carrot slaw on Saturday. Seriously you guys, we stuffed ourselves silly.
And the bakery was INSANE. Every kind of baked good you could ever imagine.
After momma coale simmered me down, I settled on getting just two.
The vegan carrot cake and this chocolate chip cookie sandwich.
And then I happily fell asleep with a belly ache.
Saturday afternoon was spent visiting with faculty and students at Vanderbilt and then in the evening we explored Nashville.
Again, I did a super lousy job of taking pictures...but I laughed out loud at this.
And Sunday morning we headed back home to Virginia.
But the fun doesn't stop there! Momma Coale is staying with me all week, and that just fills me up to the brim. And with her around, I'll be back with lots of home cooked dinners this week.
